Romantic Taurus Mango Spice Cake with Vanilla Bean Cream Cheese Frosting

This is a favorite Taurus recipe from my book Sexy Star Sign Cooking: An Astrology Cookbook for Lovers. We are currently in Mango season and in the last week of Sun in Taurus, so I couldn’t think of a better recipe to share. Throughout my daughter’s childhood, growing up on the beautiful island of Maui, we often found ourselves blessed as the lucky recipients of huge bags of mango each season. My Taurus girl was also a big fan of the traditional carrot cake, with it’s luscious cream cheese frosting and moist spice cake. So one day I had the bright idea to use mango as an alternative to the carrots and switched a few other ingredients around, and to our delight, the Mango Spice Cake was born, and has become a family favorite every since. I’d highly recommend giving this a try for an upcoming graduation celebration, baby or wedding shower, or just as a special dessert from my family to yours. Bon Appetit!

High in vitamins A, C, and E, all antioxidants that help reduce stress that can affect Bulls when they are overwhelmed and their thyroids are taxed from running on over-load for too many days in a row. Trace amounts of copper, iron, and fiber will also help get them back in balance, so if Taurus can’t make it to the Islands for fresh-picked mangoes, they definitely need to pick them up at their local specialty produce market.

Mango Spice Cake with Vanilla Bean Cream Cheese Frosting

Serves 12

Taurus will love the spice and texture of this delicious cake. You may get more than you bargained for when you show up with this. Make sure you bring the whole cake!

Cake

  • 2 cups all-purpose flour
  • ½ teaspoon salt
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • Pinch of cloves
  • 3 large eggs
  • 2 cups granulated sugar
  • 1 ½ cups vegetable oil
  • 2 teaspoons vanilla extract
  • 1 can (8 ounces) well drained crushed pineapple
  • 2 cups mango, peeled and diced
  • 1 cup shredded coconut
  • 1 cup chopped walnuts, pecans, or macadamia nuts, chopped

Frosting

  • 3 cups confectioners’ sugar
  • 1 (8 ounce) package cream cheese
  • ½ cup butter, softened
  • 1¼ teaspoons vanilla extract
  1. Preheat the oven to 350ºF. Grease and flour 13x9x2-inch baking pan.
  2. In a mixing bowl, combine the flour, salt, baking soda and spices, mix together set aside.
  3. In a separate mixing bowl, beat the eggs and sugar until smooth consistency, and then whisk in the oil and vanilla.
  4. Add the dry ingredients to the egg mixture, mixing in a small amount at a time until incorporated.
  5. Stir in the mango, pineapple, coconut, and ½ cup of the walnuts. Pour into the prepared baking pan. Bake for 30 to 40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Remove from the oven and cool for 1 hour. Turn out onto a platter.
  6. In a medium mixing bowl, combine all frosting ingredients. Beat with a hand-held mixer until smooth. Spread the frosting on the cooled cake and serve.
